Italian Beef Roll Ups

What a great meal!! A little time consuming but so worth it! The meat is tender, juicy & full of flavor. I served this with rigatoni with the extra sauce & some cheesy broccoli. It's been a while since I made a meal this satisfying - I have a very happy family tonight!

3C Italian bread crumbs
1/C grated Parmesan
1/2lb salami - finely chopped
4 eggs
1C water
1 1/2lbs rump roast - cut into 1/8in slices
1/4C olive oil
28oz spaghetti sauce

In a small bowl combine the bread crumbs, cheese, salami, eggs & water. Mix well. Spread the mixture evenly over the beef slices. Roll up jelly roll style & secure with a toothpick.

In a large skillet heat the oil. Brown the beef, in batches, on all sides. Place in a baking dish. Pour spaghetti sauce over the beef. Cover & bake at 250* for 4 hours.

Taco Dip

Yummmmm!!! Gooey, cheesy taco goodness!! This is a quick, throw together dip too. Perfect for during the football game!!


Taco Dip

1lb ground beef
1 package taco seasoning
1 can refried beans
8oz sour cream
2c shredded cheddar cheese

In a large skillet brown the ground beef. Stir in the taco seasoning & refried beans. Stir until combined. Spread into the bottom of a baking dish. Spread the sour cream on top of the meat mixture. Sprinkle the cheese on top. Bake at 350* for 25-30 minutes. Serve with tortilla chips.

Cheeseburger Soup

I *LOVE* this soup!! It's so good! It's easy, the flavor is great, and it's very hearty! Marley declared it tasted like Halloween!! Which must be a good thing because she cleaned her bowl!

I have made this in the crockpot too. Just throw every thing but the sour cream in, stir, and cook on low 6-8 hours. Stir in the sour cream right before serving.


Cheeseburger Soup

1lb ground beef
3/4c chopped onion
3/4c chopped carrots
3/4c diced celery
1tsp dried basil
1tsp dried parsley
4T butter, divided
3C chicken broth
4C diced potatoes
1/4C flour
8oz Velveeta - cubed
1 1/2C milk
1/4C sour cream

Brown beef in a large sauce pot and set aside. In same pan, sauté the onion, carrots, celery, basil & parsley in 1T butter until the veggies are tender, about 10 minutes. Add broth, beef, and potatoes. Bring to a boil. Reduce heat, cover & simmer 10-12 minutes or until potatoes are tender. Meanwhile, in a small skillet, melt the rest of the butter. Add the four, cook & stir 3-5 minutes. Add to the soup & bring to a boil. Cook & stir for 2 minutes. Reduce heat to low. Add cheese & milk. Cook & stir until the cheese melts. Remove from heat & stir in the sour cream.

Tex Mex Beef & Potatoes

Yum!!!! Very filling, easy to make casserole. Plus my house got to smell like sautéed peppers & onions which is one of the best smells in the world!!

1lb ground beef
1 red pepper - chopped
1 small onion - chopped
1 package taco seasoning
1/2c water
4c frozen hashbrowns
1 can corn - drained
1/2lb Velveeta - cubed

Preheat the oven to 350*. In a large skillet brown the ground beef with the peppers & onions. Add the taco seasoning & water. Mix well. Stir in the corn & Velveeta. Stir occasionally until cheese is melted. In a greased 9x13 baking dish add the hashbrowns. Spoon the beef mixture on top. Bake for 25-30 minutes or until heated through.

Asian Beef & Noodles

This wasn't anything special but it was good! My 3 year old LOVED the noodles of course...I added some crushed red pepper on top for a little spice.


Asian Beef & Noodles

8oz ribeye - thinly sliced
1tsp dark sesame oil
2c shredded cabbage
2 packages beef flavor Ramen noodles
1 1/2c water
1T soy sauce

Heat 1/2tsp of the oil in a large skillet. Add the meat. Stir fry for 1 minute & remove the steak & set aside. Heat the remaining oil. Add the cabbage & stir fry for 1 minute. Remove from the skillet & set aside. Add the water & 1 Ramen seasoning packet to the skillet. Bring to a boil. Add the noodles & cook until most of the liquid has been absorbed. Stir in the steak, cabbage & soy sauce.

Easy Taco Crescent Ring

Nice little alternative to Taco Night or makes a great appetizer for Game Day! I halved the recipe & only used 1 tube of crescent rolls. This is another easy recipe to alter to your tastes - add onion, peppers, refrained beans, ect to your taco meat!


Easy Taco Crescent Ring

2 package crescent rolls
1lb ground beef
1 package taco seasoning
1c shredded cheddar
Your favorite taco toppings

Brown the beef. Add the taco seasoning.
Unroll the crescent rolls. On a cookie sheet place wedges in a circle, wide side in the middle. Seal the edges.
Add the cheese to the meat. Place the meat on the rolls & wrap the pointed edges around to form a ring. Bake at 375* for 12 minutes.

Taco Pizza

I've had several people ask me for my taco pizza recipe...It's silly easy. It's sooooo good. I love taco pizza. Sunday nights during the winter are movie/taco pizza night in this house!



I use the Betty Crocker dough mix - you just add water. I also add in 1T of dried cilantro. Use 2 packages for a 9x13 cookie sheet. Prepare the dough and let it rest. While it's resting, brown 1lb of ground beef. Drain off the excess fat and stir in a package of taco seasoning. Then stir in a can of refried beans. Mix well. Grease your cookie sheet and pat out the crust. Spoon on your favorite pizza sauce. Top with the beef mixture. I plop on big spoonfuls and then do my best to smooth it out! Top with 1C shredded mozzarella and 2C shredded cheddar. Bake at 425* for 15-20minutes or until the cheese is nice and golden and the crust is lightly browned.

Let cool before you cut! We top ours with crushed Doritos, lettuce, sour cream, jalapenos and taco sauce. I always just set up an assembly line of toppings so everyone can add as much/little as they want! Pin It 1

Saucy Pepper Steak

This was de-lish! A twist on stir fry. Came together quick too. I used a honey BBQ for a bit of sweetness. Spicy BBQ sauce would also be good. It's so pretty and colorful! My 2 year old wouldn't touch it though, ahhh toddler tastes! She enjoyed a lovely dinner of white rice and a peanut butter sandwich!



Saucy Pepper Steak

1 green pepper - cut in strips
1 red pepper - cut in strips
1 yellow pepper - cut in strips
1 small onion - cut in strips
1lb sirloin - cut in strips
2 cloves garlic - minced
1/2tsp pepper
3T soy sauce
1/2C BBQ sauce
2T olive oil
2C cooked rice

Heat olive oil in a large skillet. Add peppers and onion, cook and stir 6-8 minutes. Transfer to a large bowl. Keep warm. Add meat, garlic and pepper. Cook for 3 minutes. Add soy sauce and BBQ sauce. Stir in the pepper/onion mixture. Cook until heated through. Serve over rice. Pin It 1

Beefy Tomato Mac

My mom made this a lot when I was younger...so it's comfort food to me! It's simple, it fills you up and I usually have all the ingredients on hand so it's great for those nights when the cupboards are looking a little bare!




Beefy Tomato Mac

1lb ground beef (cooked)
1 box mac 'n' cheese (prepared)
2T chili powder
1 can condensed tomato soup
1C shredded cheddar cheese

Mix together everything but the shredded cheese. Pour into an 8x8 baking dish. Sprinkle with cheese and bake at 325* until the cheese is melted and everything is heated through...about 20-30mins. Pin It 1

BBQ Lasagna

This is Dustin's ALL TIME favorite meal that I make. I make it on his birthday and whenever I need to tell him "thank you"! He had a little medical procedure done yesterday so I made it tonight as a Get Better Soon Dinner.

You'll read the recipe and say "But Jen! There's 5642321 ingredients!" Yep. But they are ingredients that you should have on hand, and it actually goes pretty quick. HOWEVER there's no need to make your own BBQ sauce - just use a bottle of your favorite store brand!

BBQ Lasagna

1lb ground beef
1C ketchup
1/2C brown sugar
1/4C lemon juice
2T cider vinegar
2T Worcestershire sauce
1T yellow mustard
1 garlic clove - minced
1/8tsp chili powder
1/8tsp lemon pepper
2T liquid smoke
6 lasagna noodles
2C shredded cheddar cheese
2C shredded mozzarella cheese

In a skillet brown the beef and drain off the excess fat.
In a small sauce pan combine the ketchup, brown sugar, lemon juice, vinegar, Worcestershire, mustard, garlic, chili powder, lemon pepper and liquid smoke. Bring to a boil. Simmer, uncovered, for about 10 mins.
Meanwhile bring a large pot of water to a boil. HEAVILY SALT IT. Your pasta water should ALWAYS be like salt water. Cook the lasagna noodles. Drain the noodles.
Mix the bbq sauce with the hamburger.
In a loaf pan spread about 1/4C of the BBQ beef. Layer 2 noodles, 1/3 of the remaining beef, and 1/3 each of the cheeses. Repeat twice, ending with the cheese on top.
Bake uncovered at 350 for 50-60 mins. Let stand AT LEAST 10mins before cutting. This step ensures your lasagna will stay together and you won't have that dreaded anxiety of taking the first slice of lasagna out of the pan!! Pin It 1
