Tex Mex Beef & Potatoes

Yum!!!! Very filling, easy to make casserole. Plus my house got to smell like sautéed peppers & onions which is one of the best smells in the world!!

1lb ground beef
1 red pepper - chopped
1 small onion - chopped
1 package taco seasoning
1/2c water
4c frozen hashbrowns
1 can corn - drained
1/2lb Velveeta - cubed

Preheat the oven to 350*. In a large skillet brown the ground beef with the peppers & onions. Add the taco seasoning & water. Mix well. Stir in the corn & Velveeta. Stir occasionally until cheese is melted. In a greased 9x13 baking dish add the hashbrowns. Spoon the beef mixture on top. Bake for 25-30 minutes or until heated through.
